Tivoli Dining: Ristorante Sibilla (Tivoli, Italy)

Ristorante Sibilla

Located near the temple of Vesta, on the highest point of Tivol’s acropolis of Tibur Superbum (which is today’s Tivoli) is the ancient Roman structure the Temple of the Sibyl.  The temple’s characteristic shape and spectacular effect is visible both from Piazza del Tempio de Vesta and from the Gregorian Bridge. Built in the early first century BCE, near the end of the Roman republic, the Temple of the Sybil was one of the most frequently drawn sites in the Roman Campagna. The number of impressive historic artists depictions of the temple are vast and highly sought after pieces.

In the middle ages, a church was established inside the temple, which was consecrated to the Saint George, and was first mentioned in 978CE. The frescoes of the church which could be seen until the beginning of the 20th century have disappeared.

The temple has a circular design with a peristyle of stone columns and lintels around the outside.
The stunning 5 star Ristorante Sibilla is perfectly poised on top of the acropolis overlooking the Temples of Sybil and Vesta. According to Conde Nast Traveler, everyone from Princess Margaret to Yoko Ono have dined at this restaurant. We certainly have and it is an experience that will not disappoint.

The Sibilla Restaurant is pleased to offer hospitality in its rooms and in its beautiful garden at the foot of the temple, in front of the horrid Villa Gregoriana. Now since 1720 on the acropolis of Tivoli, Sibilla saw the restaurant to celebrate the most important events of many outstanding personalities.
